Akron Jo's
Cafe chef Andres Arreola practices a cooking technique in preparation of
“Flavors from the Far East,” a seven-course dining tribute to fathers to
be held on Father's Day.
'Flavors from the Far
East' coming to Akron Jo's
By Julie Ann Madden
Akron Jo's Cafe chefs' next seven-course meal will be a tribute to dads
-- it will be held on June 18, which is Father's Day. “We'll be thanking
all fathers,” said Chef Andres Arreola. “We're hoping they'll have had a
good weekend and seen their children.” “We look forward to being there
for them,” he added. This dining tribute will begin at 6 p.m. Sunday,
June 18, at Akron Jo's Cafe. This seven-course meal will include Arreola
carving a tribute to fathers from a block of ice. The theme of the meal
is “Flavors from the Far East.” The meal will begin with hors d'oeuvres,
which will be created by the two young chefs with recipes from The
Orient. Next, patrons will be served two courses: soup and salad. These
recipes originate in Thailand. The soup will be chilled avocado and crab
meat, and the salad is spicy cucumber and noodle. The fourth course
comes from China and is entitled “Seafood in a Basket.” This will be
followed by a sorbet from the Vietnamese called “Ginger Lemon Grass.”
The main course will be Japanese food: Shiitake and Cranberry Stuffed
Pork Loin with Sake-Glazed Vegetables and Grilled Haole-style Yams with
Pineapple Butter. Steamed or fried rice will also be served. The final
course will be from Philippines: desserts of Champorado, which is
chocolate rice pudding, served with Banana Lumpia, which is a banana
spring roll. Arreola and Sloan studied making foods from all different
countries while completing their schooling of culinary arts and
restaurant management at the Western Iowa Community College in Council
Bluffs. They practiced making the foods at college and at their jobs
with Levy Restaurants, which provided most of the hot food for the Qwest
Center Omaha's conventions and private parties. Reservations are
required and can be made by calling 568-2246.

On May 16, South Dakota Department of
Environment & Natural Resources officials shut down this once
state-of-art dairy operation in rural Akron.
Family farm stands empty
after 55 years of use

Zero. That is how many cattle the Ray Heeren
family corporation can have on their main farm -- where Ray and his
wife, June, began farming 55 years ago. South Dakota Department of
Environment & Natural Resources (DENR) officials shut down Heeren's
dairy operation and cattle feedlot on 310th Street in rural Akron, S.D.
The Heerens had until May 16 to remove all cattle from this farm.
